Ulysse Collin ‘Les Maillons’ Blanc de Noirs Extra Brut is made entirely from Pinot Noir. It is a blend from different vintages to deliver the style of the domain in a more consistent and homogenic way across different years. Each vintage comes from a single cuvee, meaning only a limited amount of juice from the first press is used in the winemaking.

The domaine is relatively young, having been founded by Olivier Collin in 2003 only, with the acquisition of the first hectares of vineyards. His Champagne is the result of a combination of modern techniques and old traditions.

Ulysse Collin ‘Les Maillons’ Blanc de Noirs Extra Brut displays notes of lemon, lime and strawberry, with some hints of brioche as well. We think it’s ideal to accompany seafood and fish, sushi or soft cheese, to celebrate, or to steal the light at a smart dinner party, or simply to get some high class refreshment in a hot summer’s day.
